Before hospitality
Jessica’s first jobs were in Las Vegas at 16. At Star Nursery, she progressed from cashier to office manager to rock yard sales lead before turning 18 — an early version of the same pattern that would follow throughout her career.

Joined as Bar Manager, opened Navy Yard, then supported its closure and the consolidation of bar operations into the DuPont venue.

About Jessica
I’m Jessica Fitzmeyer, Founder & Principal Consultant of J Fitz Hospitality.
My hospitality career began at the host stand at Fleur de Lys in Las Vegas and grew through nearly every layer of front-of-house operations. I moved from hosting into service, beverage, training, openings, and leadership — working across fine dining, nightlife, local bars, luxury hotel rooftops, chef-driven restaurant groups, and high-volume multi-venue hospitality.
At North Italia, that growth moved beyond a single venue: bartender became key hourly, then corporate bar trainer and bar setup support across more than 15 openings, followed by a move into floor management in Miami. In Washington, D.C., I managed the bar at Barcelona Wine Bar on 14th Street before joining Swingers Crazy Golf.
At Swingers, the progression continued across markets. I opened Navy Yard in Washington, D.C., supported the consolidation of its bar operations into DuPont, and was later asked to relocate to Las Vegas to open the company’s largest flagship location and create its bar program. After moving into systems analytics, I was asked to help build Boston’s bar program and regional cocktails before supporting the venue’s systems installation, setup, and training.
Today, I’ve worked in or opened more Swingers locations than anyone else in the company, giving me a uniquely hands-on view of what happens when operations, finance, technology, data, training, beverage, and multi-market standards all have to work together.
That progression is the foundation of J Fitz Hospitality. I understand what happens during service, what operators need from their systems, what finance needs from the numbers, and how decisions made behind a screen affect the people using those tools in the real world.
J Fitz Hospitality exists to bridge those worlds — translating operational needs into better processes, smarter technology, and systems teams can actually use.
